Creole rice salad

this is one of my favorites, a nice alternative to potato salad

3 cups cooked rice

4 hard boiled eggs chopped

12 oz crisp fried bacon chopped

½ cup chopped pickles

½ cup chopped green olives

½ cup chopped celery

½ cup chopped onions

½ cup chopped shallots

½ cup mayonnaise

2 tbsp olive oil

1 tbsp vinegar

Mix all ingredients and chill before serving, about 1-2 hours
